Ingredients

  • 6 tablespoons unsalted butter at room temperature
  • 1/2 cup coconut sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 large egg, beaten
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 370 degrees Fahrenheit. 
  2. Line a baking sheet with parchment paper. Brush with coconut oil to prevent sticking.
  3. In a bowl, combine the butter, coconut sugar, egg, and vanilla extract. Beat the ingredients together until well mixed.
  4. Pour in the flour, baking soda, and salt. Beat until combined.  
  5. Scoop a tablespoon of the dough and put it on the baking sheet. Place each dough at least 2 inches from each other. 
  6. Bake for 8 to 10 minutes or until the top of the cookie becomes golden and dry.
  7. Remove baking sheet from oven and set aside to cool down for 3 minutes.

Ingredients

  • 1 stick unsalted butter at room temperature
  • 1 cup coconut sugar
  • 2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup dark chocolate chips
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 4 ripe bananas mashed
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees F.
  2. Line a baking sheet with parchment paper. Brush with coconut oil to prevent it sticking.
  3. In a bowl, cream coconut sugar and butter together until well-combined. Add the egg and the mashed bananas. Mix together, scraping down the sides of the bowl to dissolve lumps. 
  4. Add the flour, baking soda, baking powder, baking soda, salt, and vanilla extract. Mix well until combined then add in the chocolate chips.
  5. Pour the mixture into a loaf pan. Bake for 55 to 60 minutes or until a toothpick inserted in the center of the load comes out clean. 
  6. Remove from the oven and set aside for 30 minutes to cool down.
  7. Serve and enjoy.
